Traditional Dish – Rice Flour Porridge (Pez)

Introduction:

How to Make Pez

Ingredients:

  • 1 cup rice flour
  • ½ cup rice starch water (water left after cooking rice)
  • 2-3 cups water
  • Salt to taste

Preparation Method:

1. Soaking the Rice Flour:

  • Take 1 cup of rice flour.
  • Mix it with a little water and rice starch water to make a thick batter.
  • Add salt as per taste and let it soak overnight.
  • Soaking overnight causes slight fermentation (Am), making it even more beneficial for digestion.
  • By morning, a layer of water forms on top of the mixture, known as Kaanji. This Kaanji has a slightly sour taste and is extremely good for digestion.

2. Cooking Pez:

  • In the morning, bring 2-3 cups of water to a boil in a deep pan.
  • Slowly add the soaked rice flour mixture while stirring continuously to prevent lumps.
  • Cook on low heat for 5-10 minutes until the mixture thickens.

3. Preparing the Mixture for the Next Day:

  • After making Pez in the morning, do not discard the leftover Kaanji.
  • It can be used to prepare the next day’s Pez mixture.
  • This process enhances the slightly tangy flavor of Pez, making it even tastier and more nutritious.
